AndI do a weekly 48 hour water fast (most weeks). I'm not terribly strict about it, and it has been working for me so far. I have lost 10 lbs (goal is 10-20lb loss) and I'm maintaining this 10lb loss so far.

Its fine to do either long term as long as you have excess fat to lose. Obviously, you will likely see faster results with rolling 48s unless you are able to somehow fit 2-3 meals worth of food into one meal while doing that. I lost 55 pounds in 6 months with ADF (rolling 36:12) highly recommend personally.
ADFand extended fasting can definitely counter-act this—especially if you eat over your TDEE on eating days. ADF is a pretty low key way of fasting; it's very sustainable over the long term. Many people have done it for many months to lose large amounts of weight. Fasting also has a ton of other health benefits.
Ido fasting for gut health reasons and the most I see in a 48 hour fast is a slight decrease in strength on day 2 or 3. I generally do more lighter reps than heavier ones. If you play a sport, I'd also not do a 48 hour fast on those days if you care about preformance. I'll play soccer on a 36 hour fast but 2 or 3 day fast, I'm slower.
Experiencedfasters get the best results if they do 60-hour fasts once or twice a month. You, as a newbie, can try a prolonged fast once a month and see how your body responds to it before intensifying the schedule. starting with alternate day fasting and working up to 24 hours, 36 hours, and a 48-hour fast. Thishas been a fun mental challenge to get in the fasting mindset. 10 days into January and I feel so much better after dropping the fast food and energy drinks. I weighed in at 202 (my highest ever) last Thursday and I was down to 189 this morning. My goal is to get to 165. I’m thinking of doing 18:6 IF with a 36 hour water fast weekly.
Somethoughts for newbies. What started out as a 36 hour fast turned into a 72 hour fast on a whim. What I learned: Hunger was constant. I learned to accept that it was a thing. Hunger reaches a peak and gets no more intense. My hunger started receding on day 3.
